Ingredients For chunky potato cheddar soup

5 to 6potatoes, peeled and chopped

1 Tbspbutter

1 smonion, chopped finely

1 cchicken stock (homemade if you'd like)

1 tspsalt

1/4 tsppepper

2 ozcheese, shredded

1 tspheaping rosemary chopped, fresh

bacon as garnish (optional)
How To Make chunky potato cheddar soup

1Melt the butter in a heavy saucepan. Add the onion and cook on medium for 5 minutes.

2Add the potatoes and the remaining ingredients. Let the soup simmer for 20-30 minutes.

3Puree about half of the mixture, leaving some of the potatoes and onions intact.

4Garnish with bacon, sprinkle with some cheddar cheese.
