It is peach season in Texas, and this is a great way to utilize those fresh peaches.

Ingredients For chilled peach soup

1/8 tspcardamom seeds*

3whole cloves

2 lbpeaches, peeled and soarsely chopped

2 corange juice

3 Tbsplime juice

1/4 choney
-
1 1/2 tspground cinnamon

1 tspground ginger
-
18 oz. container vanilla yogurt

1 tspdiced crystallized ginger

fresh mint springs, fresh peach slices
How To Make chilled peach soup

1Place cardamom and cloves on a 6 inch cheesecloth square, tie with string.

2Bring spice bag, chopped peach, and next 5 ingredients to a boil in a large saucepan. Reduce heat; simmer, stirring occasionally, 10 minutes or until peach is tender. Remove and discard spice bag; cool peach mixture.

3Process peach mixture in batches in a blender or food processor until smooth; stir in yogurt and dice ginger. Cover and chill; garnish with mint and peach slices, if desired. Yield: 6 cups.

4*Substitute 1/8 teaspoon ground cardamom seeds, if desired, stir it in with cinnamon and ginger.
