My nephew is in the Military and while he was teaching at West Point he would have a few soldiers over to his home for some good home made food. He got this recipe from me and told me that his men really enjoyed this soup. I mentioned to him to serve it with nice hot home made Beer bread. YUM!!

Ingredients For cheeseburger soup

1/2 lbground beef

1 Tbspbutter, room temperature

1 tspparsley flakes

1 tspdried basil

3/4 cchopped onion

3/4 ccelery

3/4 cshredded carrots

3 cchicken broth
-
4 cdiced potatoes

1 1/2 cmilk
-
3 Tbspflour
-
3/4 tspsalt
-
1/2 tsppepper
-
8 ozamerican cheese
-
1/2 csour cream
How To Make cheeseburger soup

1In a 3 quart saucepan, brown beef, drain & set aside. Using the same saucepan, saute' onion, carrots, celery and add the basil and parsley in 1 tablespoon of butter. (about 8 minutes)

2Next add the chicken broth and diced potatoes and the browned beef. Bring to boil, reduce heat, cover & simmer 10 -12 minutes. Make sure your potatoes are done.

3I then add some flour to my milk and shake until blended. Pour milk into saucepan and stir until blended. The flour should thicken the broth some. Cook 2 minutes. Reduce heat to low and add the American cheese and stir until cheese melts. You can add a dollop of sour cream just before serving, if you prefer.
