One of my family's favorites. We usually have this on Christmas Eve.

Ingredients For cheese potato soup

2 canchicken broth
-
2 cdiced potatos
-
1/2 cchopped celery
-
1/2 cchopped onion
-
1/4 cmargarine
-
1/4 ccorn starch
-
2 cmilk
-
3/4 ccooked, diced ham

8 ozvelvetta, cubed

1/2 cwater
-
1 cchopped brocolli (optional)

1/2 cchopped carrots
How To Make cheese potato soup

1In saucepan, boil the potatos, celery, onion,brocolli (if desired) and carrots in the 2 cans of chicken broth until desired texture.

2In large stock pan, melt margarine. Add cornstarch and milk. Stir until thick.

3Add vegetables and broth, ham, velvetta, and 1/2 c. water (or more depending how thick or thin you like your soup). Heat, stirring often. Do not boil.
