One of my family's favorites. We usually have this on Christmas Eve.

Ingredients For cheese potato soup

  • 2 can
    chicken broth
  • 2 c
    diced potatos
  • 1/2 c
    chopped celery
  • 1/2 c
    chopped onion
  • 1/4 c
    margarine
  • 1/4 c
    corn starch
  • 2 c
    milk
  • 3/4 c
    cooked, diced ham
  • 8 oz
    velvetta, cubed
  • 1/2 c
    water
  • 1 c
    chopped brocolli (optional)
  • 1/2 c
    chopped carrots

How To Make cheese potato soup

    In saucepan, boil the potatos, celery, onion,brocolli (if desired) and carrots in the 2 cans of chicken broth until desired texture.

    In large stock pan, melt margarine. Add cornstarch and milk. Stir until thick.

    Add vegetables and broth, ham, velvetta, and 1/2 c. water (or more depending how thick or thin you like your soup). Heat, stirring often. Do not boil.
