I have not been able to try this yet. I just found this recipe recently at my mom's house. We are huge gumbo fans at my house. So, when my husband has a day off I am going to get him to make this. By the way, he is the gumbo cooker in our family.

Ingredients For cabbage & andouille gumbo

1/2 cflour

1/2 ccanola oil

1large onion, chopped

1/2 csweet pepper, chopped
-
3/4 cshallots, chopped
-
3cloves of garlic, chopped

1small head of cabbage, chopped fine
-
1large andouille sausage, skinned, and sliced
-
2 1/2 qtwater to cover
-
file to taste

salt and pepper to taste
How To Make cabbage & andouille gumbo

1Make roux with flour and oil. In another pan add onion, salt, pepper, sweet peppers, shallots, garlic, and saute for 10 minutes. Then add andouille and saute again for 20 minutes.Add roux and then add water and cook for 1/2 hour. Add chopped cabbage and cook for 25 minutes. Set for 1 hour before serving. Add file and enjoy. Serve over hot rice.
