Ingredients For black eyed pea & sausage gumbo

  • 1 md
    onion ( chopped)
  • 1 md
    green bell pepper (chopped)
  • 5
    celery stalks (chopped)
  • 2 clove
    garlic (minced)
  • 1 lb
    andouille sausage (sliced 1/4 in)
  • 1 can
    15 oz tomatoes (cut small)
  • 2 can
    black eyed peas (do not drain}
  • 1 can
    whole kernel corn
  • 1/2 sm
    bag frozen okra
  • 1 Tbsp
    olive oil or your favorite oil
  • 1 c
    rice (uncooked)
  • 3 c
    chicken stock

How To Make black eyed pea & sausage gumbo

    Saute onion, bell pepper,celery in oil for 3-4 minutes and sausage and garlic cook 3-4 minutes more add remaining ingredients and simmer on medium-low heat 45 minutes.
