I first sampled this just after Christmas this year while visiting Mom and Pop. This is a totally delicious and comforting soup! My dad has just finished radiation and chemotherapy for cancer and he ate, and ate, and ate of this soup. It was good to see him have an interest in eating again. Please pinch this...for him. It is a fantastic and satisfying soup. Too easy to make but very satisfying.

Ingredients For billie's potato-cabbage-ham soup

4 Tbspbutter

3 Tbspoil

3 mdpotatoes, cubed (about 1 lb)

2 mdcarrots, diced

1 bunchscallions, diced

3 Tbspflour
-
4 cshredded cabbage and diced

2 cwater
-
1 can13 oz. chicken broth
-
1 Tbspdill weed
-
pepper and salt to taste

1/4 lblean ham, diced
How To Make billie's potato-cabbage-ham soup

1Peel potatoes and carrots. Cut into 1/4" dice. Shop scallions and cut ham into 1/4" dice (set aside the ham).

2Melt butter. Add all veggies EXCEPT cabbage. Saute 5 minutes.

3Stir in flour and cook 1 minute...stir...stir....stir

4Add cabbage, water, broth, dill and pepper. Bring to a boil. Reduce heat and simmer 20 minutes covered.

5Just before serving, lightly mash those potatoes with a masher to just thicken a little. Now add the ham and give a few minutes to heat through.
