I first sampled this just after Christmas this year while visiting Mom and Pop. This is a totally delicious and comforting soup! My dad has just finished radiation and chemotherapy for cancer and he ate, and ate, and ate of this soup. It was good to see him have an interest in eating again. Please pinch this...for him. It is a fantastic and satisfying soup. Too easy to make but very satisfying.

Ingredients For billie's potato-cabbage-ham soup

  • 4 Tbsp
    butter
  • 3 Tbsp
    oil
  • 3 md
    potatoes, cubed (about 1 lb)
  • 2 md
    carrots, diced
  • 1 bunch
    scallions, diced
  • 3 Tbsp
    flour
  • 4 c
    shredded cabbage and diced
  • 2 c
    water
  • 1 can
    13 oz. chicken broth
  • 1 Tbsp
    dill weed
  • pepper and salt to taste
  • 1/4 lb
    lean ham, diced

How To Make billie's potato-cabbage-ham soup

    Peel potatoes and carrots. Cut into 1/4" dice. Shop scallions and cut ham into 1/4" dice (set aside the ham).

    Melt butter. Add all veggies EXCEPT cabbage. Saute 5 minutes.

    Stir in flour and cook 1 minute...stir...stir....stir

    Add cabbage, water, broth, dill and pepper. Bring to a boil. Reduce heat and simmer 20 minutes covered.

    Just before serving, lightly mash those potatoes with a masher to just thicken a little. Now add the ham and give a few minutes to heat through.
