I have been making this recipe for years. My husband and i both love it. He says he could eat it at least 3 times a week. Hope you enjoy it as much as we do.

Ingredients For bell pepper soup

  • 1 lb
    ground beef
  • 4
    bell peppers, chopped
  • 29 oz
    tomato sauce
  • 29 oz
    diced tomatoes
  • 2
    beef bouillon cubes
  • 2 tsp
    salt
  • 1 tsp
    ground black pepper
  • 1 Tbsp
    soy sauce
  • 2 c
    cooked white rice

How To Make bell pepper soup

    In a Dutch Oven brown ground beef over medium high heat and then drain off fat.

    Add the chopped peppers to the browned meat and sauté for 3 to 5 minutes. Reduce the heat to low.

    Stir in the tomato sauce, diced tomatoes (with juice), bouillon cubes, brown sugar, salt, pepper and soy sauce. Cover and simmer for 30 to 45 minutes.

    Stir in the rice and heat through. Eat and enjoy.
