Ingredients For thai salmon soup

1 Tbspcanola oil

2 clovegarlic minced

1 Tbspginger grated

1 smonion diced

4red chilies sliced

1 stalklemongrass bruised

4kaffir lime leaves broken

14 ozcan coconut milk

2 cvegetable broth
-
1/4 cfish sauce

juice of 1 lime

8 ozskinless salmon sliced

1 ceach fennel and spinach chopped

1carrot thinly sliced

1 stalkgreen onion chopped

1/4 ccilantro chopped
How To Make thai salmon soup

1In a large pot add oil and add the garlic, ginger, onion, chili pepper, lemongrass, and kaffir leaves. Cook on medium heat two minutes to release the flavors.

2Pour in the coconut milk and vegetable broth. Bring to a boil and reduce heat to a simmer and simmer for 15 minutes

3Strain the broth and discard the solids. Place the broth back on stove and add the fennel and fish sauce. Cook 2 minutes. Add the spinach and carrots. Cook 1 minutes. Add the salmon and lime juice. Cook 3 to 4 minutes. Add the cilantro and green onions serve
