Ingredients For thai salmon soup

  • 1 Tbsp
    canola oil
  • 2 clove
    garlic minced
  • 1 Tbsp
    ginger grated
  • 1 sm
    onion diced
  • 4
    red chilies sliced
  • 1 stalk
    lemongrass bruised
  • 4
    kaffir lime leaves broken
  • 14 oz
    can coconut milk
  • 2 c
    vegetable broth
  • 1/4 c
    fish sauce
  • juice of 1 lime
  • 8 oz
    skinless salmon sliced
  • 1 c
    each fennel and spinach chopped
  • 1
    carrot thinly sliced
  • 1 stalk
    green onion chopped
  • 1/4 c
    cilantro chopped

How To Make thai salmon soup

    In a large pot add oil and add the garlic, ginger, onion, chili pepper, lemongrass, and kaffir leaves. Cook on medium heat two minutes to release the flavors.

    Pour in the coconut milk and vegetable broth. Bring to a boil and reduce heat to a simmer and simmer for 15 minutes

    Strain the broth and discard the solids. Place the broth back on stove and add the fennel and fish sauce. Cook 2 minutes. Add the spinach and carrots. Cook 1 minutes. Add the salmon and lime juice. Cook 3 to 4 minutes. Add the cilantro and green onions serve
