Ingredients For schumann's seafood gumbo

6 Tbspflour

3bay leaves

1/2 tspthyme

1 lbcrabmeat

3 qtwater

1/2 ccelery, chopped

1/2 conion, diced

1/2 cshortening
-
pinchpepper
-
pinchsalt
-
2 lbokra
-
1/2 tsphot pepper sauce

1/4parsley, chopped bunch

1 smtomato sauce, can
-
3 lbshrimp, unpeeled
-
1.375 cbell pepper, chopped

6garlic cloves, chopped
-
1 Tbspworcestershire sauce
How To Make schumann's seafood gumbo

1Boil shrimp in salted water for 5 minutes; save stock.

2Clean shrimp and set aside.

3Cut okra into thin rounds and brown in shortening; do not scorch.

4In another pan, make a roux with flour and shortening; add garlic and cook until golden brown.

5Add onion, bell pepper, celery and parsley; cook until transparent.

6Add tomato sauce, simmer 10 minutes.

7Stir in shrimp stock and blend well; add thyme and bay leaves, cook 1 hour.

8Last 20 minutes, add shrimp, crab, salt, pepper, hot pepper sauce, worcestershire sauce and okra.

9Cover pot and allow to simmer gently at least 1 hour.
