salmon curry
A friend gave us a 20 lb. salmon so I had to come up with ideas to use up the meat so I came up with this super easy curry and it really tasted great.

Ingredients For salmon curry

1/2 lbsalmon filet skinless cut into chunks

1 cseafood or vegetable stock

1 Tbspred curry paste
-
1 Tbspcurry powder

1 can14.5 oz coconut milk

1 cfresh spinach roughly chopped

1 lgtomato diced
-
3green onions sliced
-
salt and pepper to taste

fresh cilantro for garnish
How To Make salmon curry

1Place stock, coconut milk, red curry paste, and curry powder into stock pot. Bring to a boil. Reduce to a simmer and simmer 10 minutes.

2Add spinach, green onion, and tomatoes. cook 1 minutes. Season with salt and pepper.

3Add the salmon and remove from heat. Salmon will cook fast.

4Ladle into bowls and garnish with cilantro.
