Ingredients For mama "g's' cioppino (fish stew)

  • 1/2 c
    olive oil, extra virgin
  • 2-3 clove
    garlic, chopped
  • 1 1/2 c
    onion, chopped
  • 1/4 c
    parsley, chopped
  • 2 c
    celery, chopped
  • 1 c
    green pepper, chopped
  • 2 1/2 can
    tomatoe sauce
  • 1 c
    italian dry wine.
  • 1 tsp
    salt
  • 1/4 tsp
    pepper
  • 1/2 tsp
    paprika
  • 1/2 tsp
    sweet basil leaves
  • 1-1/2 lb
    shrimp, cleaned, shelled & deveined
  • 1 1/2 lb
    assorted fish fillets: seabass, cod, snapper
  • 1 1/2 lb
    cooked, cracked crabs
  • 2 dz.
    fresh clams

How To Make mama "g's' cioppino (fish stew)

    In a Large dutch oven or large kettle, saute garlic, onions, parsley, celery, green peppers in hot olive oil, being careful not to burn. Add tomatoes sauce, wine & seasonings. Simmer 1 hour. PREPARE SEAFOOD: While sauce is cooking, cut fish into pieces, clean & crack crab and scrub the clams. After sauce is cooked, add seafood (except the clams!!!) to the kettle. Cook over low heat until fish is done (no more than 25 minutes) Add clams. As soon as clams open, serve.
