You can really use any type of fish you would like and if you wish to have a bit more "fish" flavor you can add a bit of fish sauce to taste. This specific recipe does not reheat well so plan on finishing your batch in one setting. Enjoy!!!

Ingredients For basque fish soup

1 lgonion (chopped)

1/2 ccelery (chopped)

1 lggarlic clove (crushed)

2 Tbspbutter

2 canstewed tomatoes (16 oz cans)

1/2 cdry white wine

1/2 cparsley (minced)

1 tspsalt

1/4 tsppepper

1/4 tsptyme

1 lbcod filets
How To Make basque fish soup

1In a large sauce pan, saute the onion and celery in butter until soft.

2Stir in the tomatoes, wine and spices.

3Cover and simmer for 30 min to blend the flavors.

4While the mixture is simmering, cut the fish into 1" chunks.

5Once the mixture has simmered for 30 min you can add the fish chunks to the mixture and simmer for an additional 10 min or until the fish is white and opaque.
