wintery comfort soup, cream of spinach

I really was taken back that not alot of store offer a cream of Spinach soup option, so I sat down and started playing with different options took me about 8 different tries to get it to my perfect. My kids and husband love it and I have to make this 5 or 6 times throughout the fall winter months. I have tweaked the nutmeg content just because it give it a little fall feel to it but you can add as much as you like. I hope you all enjoy this I will be posting more cream soups soon.

Ingredients For wintery comfort soup, cream of spinach

  • 2 lb
    spinach, fresh
  • 2 1/2 c
    heavy cream
  • 2 tsp
    flour
  • 4 Tbsp
    butter (i use salted)
  • 2 Tbsp
    nutmeg
  • To taste tsp
    salt and pepper
  • 2 Tbsp
    garlic (i use the already chopped in contaniner)
  • 1 lg
    white onions(finelychopped)
  • 2 lg
    chicken stock, light containers
  • 2 pkg
    carrot, shredded

How To Make wintery comfort soup, cream of spinach

  • 1
    Add butter garlic and onion cook till onion is soft use low heat so that butter doesnt burn. Add in flour make a rue keep stirring until a creamy consistency
  • 2
    Add spinach and shredded carrots cook all together about 8 mins until spinach is starting to wilt
  • 3
    Add heavy cream chicken stock and spices to the spinach cook on med low heat
  • 4
    If u like a thicker soup add some flour to a cup and mix it with some chicken stock then add to soup.

    Serve with a warm roll or baguette
