wintery comfort soup, cream of spinach
I really was taken back that not alot of store offer a cream of Spinach soup option, so I sat down and started playing with different options took me about 8 different tries to get it to my perfect. My kids and husband love it and I have to make this 5 or 6 times throughout the fall winter months. I have tweaked the nutmeg content just because it give it a little fall feel to it but you can add as much as you like. I hope you all enjoy this I will be posting more cream soups soon.

Ingredients For wintery comfort soup, cream of spinach

2 lbspinach, fresh

2 1/2 cheavy cream

2 tspflour
-
4 Tbspbutter (i use salted)

2 Tbspnutmeg

To taste tspsalt and pepper

2 Tbspgarlic (i use the already chopped in contaniner)

1 lgwhite onions(finelychopped)

2 lgchicken stock, light containers

2 pkgcarrot, shredded

How To Make wintery comfort soup, cream of spinach

1Add butter garlic and onion cook till onion is soft use low heat so that butter doesnt burn. Add in flour make a rue keep stirring until a creamy consistency

2Add spinach and shredded carrots cook all together about 8 mins until spinach is starting to wilt

3Add heavy cream chicken stock and spices to the spinach cook on med low heat

4If u like a thicker soup add some flour to a cup and mix it with some chicken stock then add to soup.

5Serve with a warm roll or baguette
