Ingredients For sweet ale soup

30 ozstout (sweet brown ale)

1lemon - rind of

16 ozmilk

2egg yolks

1/2 stickcinnamon

1 tspground ginger

1 Tbspcornstarch

3 Tbspcold water

salt to taste
How To Make sweet ale soup

1Place the beer, lemon rind, cinnamon and ginger in a large saucepan, bring to the boil then reduce the heat and simmer for 10 minutes.

2In a small bowl, mix together the cornstarch and cold water to a smooth paste.

3Add a few spoonfuls of the hot beer to the cornstarch mixture then add it to the beer, stirring constantly.

4Continue to simmer the soup gently for a further 10 minutes stirring from time to time.

5In a small bowl, mix together the egg yolks and milk.

6Add some of the hot soup to the egg mixture, stirring constantly. Return egg mixture to pot.

7Return soup to a very low heat and cook gently, without boiling, until heated through. Adjust the seasoning and serve immediately.
