Ingredients For spicy corn soup

  • 1/2 lb
    ground chicken breast
  • 1/2 c
    chopped onion
  • 1/4 c
    chopped red pepper
  • 1/4 c
    chopped jalapeno pepper
  • 2 stalk
    celery, chopped
  • 2 clove
    minced garlic
  • 1 pkg
    taco seasoning mix (taco bell)
  • 1/2 tsp
    dried red pepper flakes
  • 1 tsp
    dried cilantro
  • 1 tsp
    cumin
  • 1 can
    cream of chicken soup
  • 4 c
    chicken broth or bouillon, lower sodium
  • 1 14.5 oz can
    creamed corn
  • 8 oz
    frozen white and yellow corn
  • 1 c
    milk
  • 4 Tbsp
    instant potato flakes, to thicken

How To Make spicy corn soup

    Brown ground chicken breast in pan with onions, peppers, celery and garlic.

    Add taco mix and seasonings and mix well. Stir in cream of chicken soup and chicken broth. Simmer for 10 - 15 minutes.

    Add creamed corn and frozen corn. Return to simmer and simmer another 15 minutes.

    Stir in the milk and reheat to simmer. Stir in potato flakes and let sit for 5 minutes before serving.

    Top with crushed tortilla chips.
