Ingredients For potato broccoli bacon cheddar "stewp"

  • 4 md
    potatoes unpeeled, diced
  • 1 md
    onion, diced
  • 2 c
    broccoli, chopped
  • 3 c
    milk
  • 3 Tbsp
    butter, cold
  • 1/3 c
    flour
  • 4 c
    cheese, shredded
  • 29 oz
    chicken or veggie broth

How To Make potato broccoli bacon cheddar "stewp"

    Add your spuds, onions and broth to your crock pot and cook on high for 2 hours.

    At the 2 hour mark, add your milk and cook another hour.

    Make a rue in a small saucepan and add to the soup, mixing well. Add your broccoli and lower heat and cook another hour.

    Nuke some turkey or pork bacon, about 6 slices, and break up. Add to the soup and cook another 30 minutes.

    Add the cheese and cook another 30 minutes. Serve with a bread or biscuit and a salad for a very hearty fall dinner.
