6-8potatoes, diced

2 cshredded cheddar cheese

1 mdonion, diced

2 cbroccoli, chopped

3 TbspButter

3 1/2 Tbspflour

1-2 tspCrushed red pepper

3 cMilk
How To Make potato broccoli and cheddar soup

1Peel and dice potatoes, Cook until done. Pour potatoes once done into a bowl and cover, reserve 1 cup of potato water, set aside. In pan melt butter, cook onion til tender. Add flour and red pepper, this will be a paste, cook and stir for 4 minutes. Add milk and potato water, whisk until paste is well blended. Add broccoli and cheese and cook over low heat for about 30 minutes to an hour. When i have left over chicken i add it to this soup.

2If you want to save time you can use canned diced potatoes and just start from making the pasteand increase your milk to 4 cups.
