Last night after dinner my hubby made a request for his dinner tonight - he wanted my potato soup. I just finished making it and it tastes so good. I am trying to wait until he gets in to have a bowl. I have made this so long that I have forgotten where I got the recipe. I guess that it doesn't really matter I always adapt it to our tastes anyway.

Ingredients For paulette's potato soup

2 Tbspbutter

1 Tbspvegetable oil

1thinly sliced onion

2cloves garlic minced

1 lbpotatoes, pared, and diced

1 cdiced turnip

2 canchicken broth

1 tspcelery seed

salt to taste

1/4 tspblack pepper

1 1/2 clight cream
-
1/2 cmilk
-
1 tspbasil
-
1 tspgarlic powder
How To Make paulette's potato soup

1In medium saucepan heat butter and oil until butter is melted. Add onion and garlic and cook until onion is soft about 5-7 minutes. Add pototoes,turnip, chicken broth and seasonings. Bring to a boil over high heat. Reduce heat and cover and let simmer 25-30 minutes.

2In blender container process potatoes and turnips in batches until pureed. Return to saucepan, stir in cream and milk and cook about 5 minutes. You will have to watch this closely because it may scorch easily. I usually take out what I think that we will eat at one time and heat in microwave. You may add a little more milk if soup becomes too thick.
