4 cchicken broth

1 tspdried oregano

1 1/2 cfresh basil

1/4 ccream cheese

2 pkgdried ranch dressing mix

salt/pepper to taste

dried potato flakes, optional
How To Make mimi's creamy tomato basil soup

1Over medium heat, sauté the onions and garlic in the coconut oil until soft. Add the chicken broth, Roma tomatoes, canned tomatoes and simmer on medium heat for 30 minutes, mashing into the fresh tomatoes.

2Stir in the seasonings, ranch dressing, basil and cream cheese until cheese is fully melted. Blend soup to your desired consistency,

3Save the salt/pepper to season last, since some of the ingredients contain salt. Depending on your desired consistency, sprinkle potato flakes to thicken, which I do when feeding small children!
