This is a great soup to have for dinner with a salad and some crusty warm bread! I love taking the leftovers to work for lunch the next day! mmmmmmm!

Ingredients For maureen's baked potato soup

4 lgbaking potatoes

2/3 cbutter

6 cmilk

4green onions, chopped

12 slicebacon, cooked and crumbled

1 csour cream
-
1 1/4 cshredded cheddar cheese

2/3 call purpose flour

salt and pepper to taste
How To Make maureen's baked potato soup

1Bake potatoes. Cut in halves and scoop out pulp.

2Melt butter in large pot over low heat. Add flour. Cook until smooth, stirring constantly.Add milk. Cook over medium heat until thick and bubbly.

3Add salt, pepper, potato pulp,2 tablespoons of the green onions, 1/2 the bacon and 1 cup of the cheese. Cook until heated through. Stir in sour cream.

4Serve topped with remaining green onions, bacon & cheese.

5The prep time in this dish is so long because of the baked potatoes, but you can really shorten the time by microwaving them. :-) IDO!
