Ingredients For leprechaun soup

1 ptchicken stock
-
2 lgpotatoes small diced
-
1 lgleek small diced
-
1 pthalf and half
-
2 csnow peas chopped
-
1 bunchscallions chopped
-
2celery ribs diced
-
5 slicebacon chopped
-
1/2 csherry
-
1/2 cpistachio nuts, chopped
-
salt and pepper to taste
-
1/4 croux
How To Make leprechaun soup

1Saute bacon and vegetables except the snow peas and add to stock.

2Add the sherry and when the potatoes are tender add the snow peas,pistachios,half and half and salt and pepper.

3Bring to a boil and thicken with the roux.
