Ingredients For keto friendly broccoli cheese soup

6 Tbspgrass fed butter

1/2 cchopped yellow onion

1/2 cjulliened carrots

2 Tbspred mill paleo flour

3 cwarm chicken broth
-
1 cwarm water
-
2 cwarm heavy whipping cream

2 Tbspminced garlic
-
4 cchopped fresh broccoli
-
2 cshredded cheddar cheese.

2 Tbspcream cheese, room temp
How To Make keto friendly broccoli cheese soup

1Melt the butter in a frying pan and add the chopped onion and carrots. Saute for 3 minutes. Add garlic and continue the sauté. Salt and pepper generously. Then slowly add the flour, whisking to blend.

2When flour is added and mixed thoroughly, slowly add the chicken broth and water. Whisk to incorporate without breaking. Take pan off of the heat and slowly add the cream, whisking as you add it.

3When the cream is completely added and incorporated, put the pan back on the heat on low and add the cream cheese, whisking. When that is incorporated start adding the shredded cheese, a half cup at a time and making sure all of it melts before adding more. Keep at it until all of the cheese has been added. Salt and pepper the soup to taste.

4At this point I add a little more chicken broth if the soup needs to be thinned. Then I pour all of it into a crock pot and then add the chopped broccoli. Turn the pot on high for two hours and then down to low or warm.
