This is based on a recipe from my favorite restaurant when I was growing up. Their food was amazing & of the utmost quality. The owner also had a flair for making delicious comfort food. This is so nourishing, and rich without being sickening. One of our absolute favorites on a cold day! Great as a meal or first course.

Ingredients For ham & cheese soup

1/3 cbutter
-
1/3 cdiced onion

1/3 cflour
-
5 cmilk
-
1 tspsalt
-
1/2 lbdeli ham, cut into bite-sized chunks

2 Tbspparsley, fresh (or more)

1 dashhot sauce or 1 tsp. dijon mustard

2 csharp cheddar cheese, shredded (or mix of cheeses)

1tsp. thyme, fresh

1dash nutmeg
How To Make ham & cheese soup

1Melt butter and add onion, sauteeing until soft. Add flour & mix very well for a few minutes. Then add milk & salt nutmeg, and thyme. Cook on medium heat for about 20 minutes, making sure to stir frequently & not scald. Note: I like to sautee the ham first too, to get it a little bit brown and flavorful.

2Turn heat closer to a simmer. Add ham, parsley & hot sauce or mustard. Stir in well, then add the cheddar cheese slowly until melted.
