This is still one of my favorite soups when I'm not feeling well. As with a lot of other soups, it is even better the next day. I have cut up left-over chicken and put it in the soup also.....

Ingredients For creamy potato soup

6 - 8 mdpotatoes, peeled and cubed

1 mdonion, chopped

2ribs celery, chopped
-
1 tspchopped garlic
-
2 tspsalt (or to taste)
-
1 tspblack pepper
-
4 cchicken broth (enough to cover potatoes)
-
1 ptheavy cream
-
6 Tbspbutter or margerine
-
1 cdry, instant potato flakes (for thickening)
- OPTIONAL GARNISHES:
-
bacon bits
-
sour cream
-
shredded cheddar cheese
-
chopped green onion
How To Make creamy potato soup

1Place potatoes, onions, celery, garlic, salt and pepper in the 4 c of chicken broth in a large pot. Add a little water if necessary to cover potatoes.

2Cover and cook on medium heat for about 30-45 minutes, stiring occasionally, until vegetables are fork tender. Add milk, butter, and potato flakes.

3Lower heat and simmer a few more minutes or until thickened. Do NOT Boil.
