This recipe is basically my cream of potato bacon soup. I just replaced cauliflower for the potatoes so I can stick to my low carb diet. I enjoyed very much, how satisfying this soup is.

Ingredients For cauliflower bacon red pepper chowder

    lg head cauliflower
  • 6
    slices bacon
  • 1 lg
    chopped onion
  • 1 md
    chopped red pepper
  • 6 c
    chicken stock
  • 1 c
    water
  • 1 Tbsp
    celery salt
  • s&p
  • 1
    lg bag frozen cauliflower
  • 1 c
    heavy cream
  • adobo (optional)

How To Make cauliflower bacon red pepper chowder

    In a big pot fry bacon slices til crisp. Remove from pan set aside. In bacon grease saute onions, peppers and chopped cauliflower for 5mins til softened.

    Add chicken stock, water, and S&P. Bring to boil, turn to medium low and simmer for 20min. Blend together with hand or regular mixer till smooth.

    Bring soup back up to slight bubble, add frozen cauliflower, turn to med low and cook for 10 min, add heavy cream, season to taste add bacon and simmer for another ten min. Serve with ciabotta bread and garnish with bacon (optional) If too thick add more stock
