Ingredients For creamy broccoli cheddar soup

1 bunchbroccoli florets

1 smwhite onion, finely chopped

3 Tbspbutter

3 Tbspall purpose flour

1 1/2 cchicken stock (sub veggie stock)

1 cheavy whipping cream
-
3/4 cshredded cheddar cheese or 1 10oz canned cheese

1 cshredded white cheddar cheese
-
1 tspcayenne pepper
-
1-2 pinchsalt and pepper to taste

1/2 cchopped green onion as garnish
How To Make creamy broccoli cheddar soup

1Prep: Cut the head of broccoli into very small florets and discard the stems; finely chop the small white onion

2Over medium-high heat in a dutch oven or pot, melt the butter and saute the onions about 3-5 minutes until softened. Add the flour and wisk until incorporated. Add stock and cook for 5 minutes. Add the cream, broccoli florets, cheese(s) and seasonings, salt and pepper to taste then simmer on low for 30 minutes.

3Serve hot garnished with chopped green onions and additional shredded cheese if desired.
