Ingredients For creamed spinach & potato soup with avocado

    olive oil
  • 1 md
    onion chopped
  • 4
    russet potatoes peeled and cubed
  • 8 c
    chicken stock
  • 1/2 c
    heavy cream
  • 2 Tbsp
    olive oiil
  • 4 clove
    garlic minced
  • 1 lg
    jalapeno seeded and chopped
  • 16 oz
    fresh spinach
  • 1 lg
    avocado sliced
  • 2 Tbsp
    fresh tarragon
  • salt and pepper

How To Make creamed spinach & potato soup with avocado

    Add the two tbsp of oil oil to a large pot. Add the onions and saute for 5 minutes. Add the potatoes and chicken stock and bring to a boil. Reduce heat and simmer until potatoes are tender.

    In the meantime add the oil to a skillet. Add the garlic and jalapeno and saute 5 minutes. Add the spinach and cook until wilted.

    Add the heavy cream into the pot with the potatoes. and simmer 2 minutes. Stir in the spinach mixture. Simmer 2 more minutes. Stir in tha avocado and tarragon. Season with salt and pepper. Serve
