Ingredients For creamed spinach & potato soup with avocado

2 Tbspolive oil

1 mdonion chopped

4russet potatoes peeled and cubed

8 cchicken stock

1/2 cheavy cream

2 Tbspolive oiil

4 clovegarlic minced

1 lgjalapeno seeded and chopped

16 ozfresh spinach
-
1 lgavocado sliced

2 Tbspfresh tarragon

salt and pepper
How To Make creamed spinach & potato soup with avocado

1Add the two tbsp of oil oil to a large pot. Add the onions and saute for 5 minutes. Add the potatoes and chicken stock and bring to a boil. Reduce heat and simmer until potatoes are tender.

2In the meantime add the oil to a skillet. Add the garlic and jalapeno and saute 5 minutes. Add the spinach and cook until wilted.

3Add the heavy cream into the pot with the potatoes. and simmer 2 minutes. Stir in the spinach mixture. Simmer 2 more minutes. Stir in tha avocado and tarragon. Season with salt and pepper. Serve
