Healthier version for casseroles. This can be varied by using veg. broth, sauteed celery, celery seed, chopped sauteed mushrooms, chicken or whatever you choose.

Ingredients For cream soup substitute

  • 1 Tbsp
    butter
  • 3 Tbsp
    all purpose flour
  • 1/2 c
    low sodium chicken broth
  • 1/2 c
    lowfat or skimmed milk
  • salt and pepper to taste

How To Make cream soup substitute

  • 1
    Melt Butter in saucepan over med. low heat
  • 2
    Stir in flour, stirring until smooth and bubbly
  • 3
    Remove from heat and add broth and milk stirring to keep smooth
  • 4
    Return to heat, bring sauce to gentle boi stirring constantly, until it thickens
  • 5
    Add salt and pepper to taste
