Ingredients For cream of mushroom soup

  • 1 c
    red wine
  • 1 gal
    sliced mushrooms
  • 1 1/2 c
    onion, finely diced
  • 1 lb
    butter
  • 1 lb
    flour
  • 1 1/2 gal
    milk
  • 1/2 c
    chicken base, diluted
  • 1 tsp
    white pepper
  • 1 Tbsp
    thyme
  • 3 qt
    heavy cream

How To Make cream of mushroom soup

  • 1
    Saute until tender.

    Make and add the roux.
  • 3
    Add milk, chicken base (diluted), white pepper, and thyme.

    Bring to a near boil.
  • 5
    Add the 3 quarts of heavy cream.
