Ingredients For cream of mushroom soup

2 Tbspbutter
-
2 Tbspfinely minced shallots

1 lbfresh mushrooms (i use the small white ones)

4 Tbspflour
-
1 qtchicken broth
-
1 tspsea salt
-
1/2 tspfreshly ground pepper

1 chalf & half
-
1/4 csherry
How To Make cream of mushroom soup

1Melt butter in a 4 quart saucepan; add shallots and soften, add mushrooms and saute for 10 minutes, stirring constantly.

2Stir in flour;mix well. Add broth, salt & pepper. Bring to a full boil; reduce heat and simmer partly covered 45 minutes. Stir a few times and do not let it stick to the pan.

3Add the cream and mix well; remove from heat; stir in sherry and serve.
