2stalks celery, coarsely chopped

1 Tbspolive oil

5 cchicken stock

1head cauliflower coarsely chopped

1/3 cwhite wine

1 Tbsplemon juice

1 tspworcestershire sauce

a pinch of dried marjoram

1/2 tspdried thyme

1 ccrumbled blue cheese

1/8 tsphot pepper sauce

2 1/3 TO 3 ccream or low fat milk

1/2 cflour
How To Make cream of cauliflower blue cheese soup

1IN A DUTCH OVER, SAUTE THE CELERY, ONIONS, AND GARLI IN THE OIL. STIR IN THE STOCK, CAULIFLOWER, WINE, LEMON JUICE, WORCESTERSHIRE, THYME, MARJORAM,AND HOT PEPPER SAUCE. BRING TO BOIL OVER HIHG HEAT, REDUCE HEAT, COVER AND SIMMER 15 MINUTES.

2REMOVE HALF OF THE VEGETABLES AND PUREE IN A BLENDER OR PROCESSOR. STIR VEGETABLES BACK INTO POT. STIR IN BLUE CHEESE. WHISK IN THE FLOUR UNTIL BLENDED. STIR IN CREAM OF MILK. BRING ALMOST TO A BOIL, REDUCE HEAT AND COOK AND STIR UNTIL THICKENED
