seriously, this is the best soup, but beware, not something to have everyday. Lots of dairy & fat. But man is it ever good...

Ingredients For cream of broccoli soup

  • 1 lb
    fresh broccoli
  • 8 oz
    butter
  • 1 c
    sifted flour
  • 1 qt
    chicken stock
  • 1 qt
    half & half or whipping cream
  • 1 tsp
    salt
  • 1/4 tsp
    white pepper

How To Make cream of broccoli soup

  • 1
    Cut brocooli in small pieces.. possible 1/2 inch pieces and boil in 1/2 cup of water until tender. Do not drain. Set aside for later use
  • 2
    Melt butter in saucepan over medium heat. Add flour to make roux. Cook for about 3 minutes or so. Add chicken stock. Stir with a wisk and bring to boil. Reduce heat to low, careful not to burn.

    Add broccoli and water, half & half and spices. Adjust salt & pepper to taste. Heat to near boiling. Then serve.
