Ingredients For cream of broccoli soup

3 cbroccoli florets, coarsely cut and blanched

1 smonion, finely chopped

3 Tbspbutter or margarine

3 Tbspflour

4 cchicken broth

1 cheavy cream

salt and pepper to taste
How To Make cream of broccoli soup

1In a heavy saucepan, melt the butter or margarine. Add the blanched broccoli and the onions, cooking until onions are soft. Stir in flour, blending well, add chicken broth. Simmer ten minutes, then remove from heat, and blend in a blender (or use a hand blender) until smooth. Slowly add the cream. Add salt and pepper to taste. enjoy!
