cream of bacon soup
I found this recipe on Facebook posted by someone in my Insta pot group . It sounded so awesome that I had to make it but with a few changes the recipe does call for 1/2 cup sherry . I don't like sherry so I didn't put it in and I forgot to add in extra broth turned out great, also I used regular salt not seasoned salt and wondra flour not regular flour .And I added pepper. My family fell in love with this soup and want me to make it more often, also I didn't use my Insta pot, just my trusty dutch oven.

Ingredients For cream of bacon soup

2 Tbspbutter

1 1/2 lbbacon cut into pieces

2 mdonions (i use red) julienned

1 Tbspgarlic crushed

2 lbrusset potatoes peeled and chopped

3 cham broth (i use ham beter then bouillon)

2 cchicken broth (i use chicken better then bouillon

1 tspground thyme
-
1/3 cwondra flour
-
1 cheavy cream
-
1/4 cmaple syrup
-
1 dashsalt
-
1/4 tspground black pepper
How To Make cream of bacon soup

1Melt Butter in a 5 to 6 quart Dutch oven. add chopped bacon cooking until crispy. Remove to a bowl lined with a paper towel to drain off excess grease. Set aside.

2Remove most of cooked bacon grease, leaving enough to cover bottom of dish. Add julienned onion , cook for 10 mins, add in garlic cook for another minute.

3Add in chopped potatoes ,broths and Thyme, bring to a boil, then reduce heat to low and let simmer till potatoes are done.( I let mine simmer for approx. 30 min)(Fork tender)

4Wisk in Wondra flour, mixing well. add in half of cooked bacon set the rest aside.

5at this point you will need an Immersion blender, or a blender.( I have an Immersion) Blend until everything in pot is nice and creamy(unless you want chunks)

6now add in cream , maple syrup, salt , pepper and the rest of the cooked bacon. stir to mix in.. serve hot
