Ingredients For cold cucumber soup

1/4 cleeks, finely chopped

1 ptlight cream

1/4 tspchervil

1/4 tspthyme

1/4 tspdry mustard

1/2 tspsesame seeds

1/4 csherry

butter

3cucumbers peeled and sliced

1/4 ccelery, finely chopped

1/4 conion, finely chopped

1/4 corange juice
How To Make cold cucumber soup
-
1Saute the leeks, onions, celery, and cucumbers in butter.

2Add sherry, chicken stock and seasonings and let cook 20 minutes.

3Add roux* to thicken and then add light cream; cook 15 minutes and cool.

4Add the orange juice and serve cold.

5*Roux-Mixture of melted butter and flour used to thicken soups and sauces
