Ingredients For chilled cucumber soup

    cloves garlic
  • 4
    scallions
  • 8 oz
    sour cream
  • 2 c
    buttermilk
  • 1/4 tsp
    cayenne
  • salt and pepper
  • 1
    12-ounce jar of salsa verde
  • small bunch fresh dill
  • 5
    cucumbers, peeled and seeded

How To Make chilled cucumber soup

  • 1
    Roughly chop the cucumbers and scallions, then place in the bowl of a food processor. Add sour cream, buttermilk, cayenne,garlic and salt. Puree until smooth. Serve the soup chilled, with a bowl of the salsa verde on the side to spoon on top. Garnish with a couple sprigs of Dill. Option Cilantro
