Ingredients For chicken florentine soup

32 ozchicken broth

1whole rotisserie chicken

2 cwater
-
1 stalkcelery
-
8 ozcream cheese
-
1/2onion chopped
-
1 tspmined garlic

garlic salt, salt and pepper to taste

1 bagbaby spinach
How To Make chicken florentine soup

1De-bone the rotisserie chicken. Throw the bones and skin in a large pot with the broth and water. Bring to a boil and then reduce heat to simmer for an hour.

2Shred the chicken meat and set aside.

3Chop the celery and onion add them to a frying pan with the butter and garlic. Sauté the garlic, onion and celery until celery is translucent. Add the spinach a little at a time and sauté until all is fully wilted. Add the cream cheese and cook until cream cheese is fully melted.

4Strain the bones/skin out of the broth. Add the shredded chicken and the contents of the frying pan to the broth and simmer for 3 hrs. Add salt, pepper and garlic salt to taste.
