This creamy, cheesy broccoli soup is a favorite of my two kids. There is so much cheese in it..they hardly ever realize they are eating vegetables. This recipe makes 4 quarts and freezes very well.

Ingredients For cheesy broccoli soup

  • 6 c
    water
  • 2 c
    diced potatoes
  • 1 c
    diced onion
  • 2
    chicken bouillon cubes
  • 1 bunch
    fresh broccoli
  • 1 lb
    velveeta cheese
  • 2 can
    cream of chicken soup
  • salt and pepper to taste

How To Make cheesy broccoli soup

  • 1
    Fill large stock pot with water and bouillon cubes. Wash and cut broccoli, potatoes and onion. Add to pot and boil for 1/2 hour or until potatoes are soft. Turn stove top burner to low.

    Add 1 pound of Velveeta cheese by cutting it into chunks and adding and stirring a little at a time to the pot.

    Add two cans of cream of chicken soup and boil for 20- 20 minutes longer. Stir frequently until soup has thickened. Be sure to stir to the bottom of the pot to avoid burning.
