1cauliflower, small florets

1potatoe, peeled & cubed

4 cchicken broth

1 Tbspminced fresh ginger

1 tspcurry powder

1 tsplemon juice, fresh

dash salt &pepper

grilled croutons
How To Make cauliflower, ginger & curry velouté

1In a large heavy bottom pot or Dutch oven, tenderize inion and garlic in butter.

2Add cauliflower, potato, and chicken broth. Bring to a boil.

3Cover and simmer for approximately 15 minutes or until vegetables are tender.

4Purée until smooth. Add ginger and curry before serving. Garnish with croutons.
