Ingredients For carot velet soup

  • 2 tbsp butter
  • 3 whole cloves
  • 1/2 tsp coriander seeds,crushed
  • 1 lb.carrots peeled and thinly sliced
  • 2 1/2 c. chicken broth
  • salt and pepper to taste
  • 1/4 tsp sugar
  • 1 c. half and half
  • fresh chives ,optional garnich

How To Make carot velet soup

  • 1
    place butter,cloves and coliander seeds into deep saucepan.Add Carrots,broth,salt sugar and pepper
  • 2
    cover and cook until carrots are tender,about 30 minutes
  • 3
    In a food processor,puree the soup mixture until smooth. return mixture to saucepan, add half and half. Gently reheat soup and add seasoning if needed. Garnish with freshly snipped chives
