1 mdsweet onion diced

1 tspolive oil, extra virgin

1 Tbsp.minced fresh ginger

3 clovegarlic minced

1/2 tspcrushed red pepper

2 tspdried rosemary

13 lb butternut squash peeled,seeded and cubed

1 lbred apples ,peeled and cored and sliced 2/4 inch thick

2 capple cider
-
2 cvegetable stock
-
1 Tbsplime juice
How To Make butternut - apple soup

1Preheat a 4 quart pot over medium heat. saute onion in oil until translucent,5 to 7 minutes.Add ginger,garlic,red pepper,Rosemary and salt and saute for 1 minute.Add squash,apples,cider and stock.Cover and bring to boil,then lower heat and simmer briskly until squash is tender,about 20 minutes more,Puree soup using an food processor or blender.add lime juice and serve
