Brownwood restaurant in Torch Lake was famous for their homemade soups. Unfortunately, they are no longer open. This was one of our favorite soups that they made.

Ingredients For brownwoods cream of broccoli soup

3 bunchbroccoli
-
2 lbham, chunked or bite size pieces
-
2 mdonions, chopped
-
1 qtcream
-
1 galchicken stock
-
1 coil
-
1 cflour
-
salt & white pepper
-
1/2 cparmesan cheese
-
1/2 cparsley flakes
How To Make brownwoods cream of broccoli soup

1Combine chopped broccoli with chicken stock & boil until tender. In sauce pan, saute ham & onions until onions are transparent. Add ham & onions to soup.

2In another sauce pan, heat oil & add flour, whisking constantly, until a medium paste is prepared (roux).

3Add cream to soup. Add roux to soup, stirring continuously until desired thickness is reached. While stirring, add 1/2 cup Parmesan cheese. Add spices to taste & parsley to garnish.
