best ever potato soup

I am always looking for new (good) potato soup recipes. I have some trouble finding ones that have a good flavor and texture. The flour mixture really makes this recipe work

Ingredients For best ever potato soup

  • 6
    bacon strips, diced
  • 1 can
    (14 1/2 oz.) chicken broth
  • 3 c
    cubed peeled potatoes
  • 1 sm
    carrot, grated
  • 1/2 c
    chopped onion
  • 1 Tbsp
    dried parsley flakes
  • 1/2 tsp
    celery seed
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 3 Tbsp
    all purpose flour
  • 3 c
    milk
  • 8 oz
    process american cheese, cubed
  • 2
    onions, thinly sliced

How To Make best ever potato soup

    In a large saucepan, cook bacon over medium heat until crisp. Using a slotted spoon remove to paper towels; drain.

    Add the broth, vegetables and seasonings. Bring to a boil. Reduce heat; cover and simmer for 15 minutes, or until potatoes are tender
  • 3
    Combine flour and milk until smooth; add to soup. Bring to a boil; cook and stir for 2 minutes.

    Add cheese; stir until cheese is melted and the soup is heated through.
  • 5
    Garnish with green onion if desired
