Ingredients For berry buttermilk soup

  • 2 c
    fresh or frozen blueberries or strawberries
  • 1/2 c
    water
  • 1/2 c
    sugar
  • 1/2 tsp
    orange peel finely shredded
  • 2 Tbsp
    orange juice, thawed concentrate
  • 2 c
    buttermilk

How To Make berry buttermilk soup

    Thaw berries if frozen, drain. Set aside 5 or6 berries for garnish.

    In a 1 1/2 quart saucepan combine berries, water, sugar, orange peel, and juice. Bring to a boil
  • 3
    Reduce heat cover and simmer 20 minutes. Cool 30 minutes.

    Pour into blender container cover and blend until smooth.

    Stir in buttermilk. Cover and chill thoroughly.
  • 6
    Garnish each serving each serving with reserved berries and a thin slice of orange.
