Ingredients For baked potato soup

6 lgbaking potatoes

1 cbutter, cold

1 call purpose flour

7 cmilk
-
6green onions, sliced

12 ozbacon,cooked & crumbled

1 3/4 cshredded cheddar cheese

8 ozsour cream

1 tspsalt
-
1 tsppepper
How To Make baked potato soup

1Bake Potatoes at 400 temp for 1 hour. cool. Cut potatoes in 1/2 lenghtwise; scoop out pulp, put in bowl and mash. Set aside.

2Melt butter in a large pan over low heat. Whisk in flour until smooth. Cook 1 min. whisking constantly. Gradually whisk in milk; cook over medium heat.whisking until mixture is thickened and bubbly.

3Stir in mashed potatoes and green onions; bring to a boil. Cover, reduce heat, and simmer 10 min. Add bacon and remaining ingredients; stir until cheese melts. serve immediately.
