angela's cream of broccoli soup

My dear friend, Angela, used to make this soup when we were roommates. When we parted because we both got married, she gave me the recipe. It is easy, reliable and delicious. I will try and add a picture of it this weekend.

Ingredients For angela's cream of broccoli soup

8 cchicken broth

2 lgcrown of broccoli

1 lgonion

1bay leaf
-
1 tspthyme
-
1/4 tspfresh ground pepper

2 or more tspsalt
-
2 Tbspbutter
-
3-4 Tbspflour
-
1 + ccream or half and half
How To Make angela's cream of broccoli soup

1Finely chop onion and cook in the chicken broth until soft. Add broccoli, bay leaf, thyme, salt and pepper. Boil briskly until broccoli starts to come apart and is quite soft.

2Remove bay leaf and discard. Working in batches, blend until smooth and return to soup pot. Melt butter in small saucepan and add flour stirring until it is the consistency of wet sand. Add to soup and stir until smooth.

3Bring up to a boil to until soup starts to thicken. Add cream to taste and warm up to eating temperature. Garnish with some shredded parmesan.

4This soup can be made with asparagus, carrot, celery or some other vegetable if you don't like broccoli.
