1 pot tuscany soup a’la me keto style
This is my guessipe on that Tuscan Zuppa soup everyone is raving about. It's a one-pot method also! I played around with making it more Keto-friendly and came up with this recipe by deleting potatoes and adding cauliflower. I decided to also nix the bacon and just add some bacon grease to saute the onions instead. It's difficult to find containers of broth that don't add sugar so you have to be careful and read the ingredients. We raise our own organic pigs so our sausage has little fat. All my ingredients are organic, btw. We love garlic so usually add a lot of it! Basil too!!

Wow, this Tuscan soup is amazing. It's basically a Keto-friendly Zuppa Toscana that's full of so much flavor thanks to Italian sausage, basil, and garlic. It is a little heavy on garlic but that can be cut back on and this recipe will still be flavorful. You could even use spicy sausage if you'd like. This soup recipe is indulgent but healthy. It makes a ton too so great if you're looking to meal prep lunch for the week.
Ingredients For 1 pot tuscany soup a’la me keto style

1cauliflower head

2 lbItalian sausage

4 bagfresh basil (in small 3/4 oz containers you get at stores)

1bulb of garlic (minced, add as much as your taste but not less than 4-5 cloves)

2 boxchicken broth (32 oz ea)

1 bunchfresh kale, chopped

1 mdyellow onion, chopped (about 2/3-1 cup)

2 Tbspbacon grease

2 ptheavy cream
-
salt, to taste

pepper, to taste
How To Make 1 pot tuscany soup a’la me keto style

1In 10 quart pot, saute chopped onions, one container of basil, and half of the minced garlic in bacon grease until onions are clear.

2Add about a teaspoon of salt and pepper.

3Add in Italian sausage and break apart while cooking so it's in smaller pieces.

4Saute until cooked through.

5When sausage is done, add in the chopped cauliflower, 2 containers of basil, and broth.

6Add just enough water to cover the cauliflower. Bring to a boil. Then simmer until cauliflower is soft (about 1/2 hr or so).

7Add chopped kale, remaining basil and garlic.

8Pour 2 pts of heavy cream into the pot. Simmer until kale is cooked and soft, about 30 minutes or so.

9Salt and pepper, to taste, and you're ready to eat it up!!
