Ingredients For sweet corn chowder

  • 2 slice
    bacon, raw and diced
  • 1/2 c
    onion, sweet, chopped
  • 2 c
    corn, cut from cob
  • 3 Tbsp
    flour
  • 3 c
    chicken stock
  • 2 c
    potatoes, diced russets
  • 1 c
    half and half
  • pinch
    salt
  • pinch
    pepper
  • 1 Tbsp
    parsley, fresh sprigs

How To Make sweet corn chowder

  • 1
    Render bacon over medium-high heat in a large sauce pan until crisp; add onions,and sweet corn and stir for approximately two minutes.

    Add flour and stir for one minute; add stock and stir until smooth.

    Bring to a boil, add potatoes and simmer for 15-20 minutes to desired consistency.

    Add half and half,,and simmer 2 more minutes.

    Season with fresh parsley, salt and pepper.
