Yes, this is a very rich soup. And it's delicious! Scallops being one of my (many) favorite types of seafood, I was excited to try this. It would be a great starter for a special meal. It's very impressive but really easy to make!

Ingredients For scallop soup

  • 2 c
    milk
  • 1 c
    heavy cream
  • 2 Tbsp
    butter
  • 1 tsp
    salt
  • 1/4 tsp
    white pepper
  • 1 tsp
    worcestershire sauce
  • 1 lb
    scallops, chopped into small pieces
  • 3 Tbsp
    finely chopped fresh parsley
  • pinch
    paprika

How To Make scallop soup

  • 1
    In the top of a double boiler, blend milk, cream, butter, salt, pepper and Worcestershire sauce.

    Place top of double boiler over the bottom with boiling water and bring to a simmer, stirring frequently.

    Add scallops to the mixture and cook until tender, about 8 to 10 minutes.

    Pour hot soup into individual bowls. Sprinkle each serving with parsley and paprika.
